Spring has sprung and with summer just around the corner we know it’s all about grilling out. Most of you will spend your days off lounging by the pool and we think this is the perfect appetizer, lunch or dinner. Your call! The smell of fruits and veggies grilling, sun shining, tunes in the background… dreaming. The skewers are light yet filling and are really easy to make. Pair with rice or quinoa to make it a meal.
Swe-Heat Shrimp Skewers

16 Florida Shrimp
1 Florida Orange
1 Florida Papaya
1 Florida Mango
1 Small Red Onion
4 Cherry Peppers
Green Onion

Instructions
- Make the Sweet Chili Jam and leave overnight for the best taste or make it first and place in fridge to cool.
- Peel the shrimp and set aside. Cut the oranges, papaya, and mangos into a comparable size to the shrimp. Cut the red onion in half, take one half and half that. Separate the petals.
- Make the skewers by alternating pieces of each ingredient (except cherry peppers) until the skewer is full. Place 1 cherry pepper in the center of each skewer. Repeat until all skewers are done.
- Heat grill to medium high. Drizzle olive oil over the skewers and oil the grill grates.
- Place skewers on grill and close lid to ensure shrimp cooks through. Lift lid flipping skewers when needed. Grill until shrimp are cooked and veggies/fruit have a nice char.
- Remove from grill, plate, drizzle with Sweet Chili Jam and garnish with green onion. Place extra Sweet Chili Jam on the side for dipping.
