Sweet Chili Jam

1 Cup Water
1 Cup Vinegar
1/4 Cup Sugar
2 Tablespoons Chili Pepper Flakes
1 1/4 Tablespoon Corn Starch
1/2 Tablespoon Ketchup
1/4 Teaspoon Minced Garlic
1/4 Teaspoon Minced Ginger
Instructions
- Vigorously boil water and vinegar.
- Add sugar, chili pepper flakes, garlic, and ginger.
- Stir in ketchup for 2 minutes.
- Add cornstarch and whisk until smooth.
- Let simmer for 10 minutes.
- Chill in fridge to thicken.
Notes
Chill at least 20 minutes. Best if you let chill overnight. Adjust chili pepper flakes according to your spice preference and sugar for sweetness.
